Ingredients
- 1 1/2 cups water
- 1 cup cream style cottage cheese
- 3/4 cup honey
- 1/4 cup butter
- 5 1/2 to 6 cups unbleached flour
- 1 cup wheat flour
- 3 teaspoons salt
- 2 pkgs active dry yeast
- 1 egg

Directions
- HEAT first 4 ingredients, in medium saucepan, until very warm (120℉ to 130℉ .)
- COMBINE warm liquid, 2 cups all-purpose flour and remaining ingredients in large bowl; beat 2 minutes at medium speed. By hand stir in remaining flour to make a stiff dough.
- KNEAD dough on well-floured surface, until smooth and elastic, about 2 minutes at medium speed. By hand stir in remaining flour to make a stiff dough.
- PUNCH DOWN, DIVIDE AND SHAPE dough into 2 loaves. Place into two 9x5 or 8x4-inch loaf pans. Cover and let rise until doubled in size (45 to 60 minutes).
- BAKE at 350℉ until golden brown and loaves sound hollow when tapped. If a soft crust is desired, brush warm loaves with melted butter.
- HIGH ALTITUDE -- 3500 FEET: Bake at 375℉ for 40 to 50 minutes.
