Honey Wheat Bread

An old fashioned family favorite

Ingredients

  • 1 1/2 cups water
  • 1 cup cream style cottage cheese
  • 3/4 cup honey
  • 1/4 cup butter
  • 5 1/2 to 6 cups unbleached flour
  • 1 cup wheat flour
  • 3 teaspoons salt
  • 2 pkgs active dry yeast
  • 1 egg

Directions

  1. HEAT first 4 ingredients, in medium saucepan, until very warm (120℉ to 130℉ .)
  2. COMBINE warm liquid, 2 cups all-purpose flour and remaining ingredients in large bowl; beat 2 minutes at medium speed. By hand stir in remaining flour to make a stiff dough.
  3. KNEAD dough on well-floured surface, until smooth and elastic, about 2 minutes at medium speed. By hand stir in remaining flour to make a stiff dough.
  4. PUNCH DOWN, DIVIDE AND SHAPE dough into 2 loaves. Place into two 9x5 or 8x4-inch loaf pans. Cover and let rise until doubled in size (45 to 60 minutes).
  5. BAKE at 350℉ until golden brown and loaves sound hollow when tapped. If a soft crust is desired, brush warm loaves with melted butter.
  6. HIGH ALTITUDE -- 3500 FEET: Bake at 375℉ for 40 to 50 minutes.
